No chemicals or preservatives of any kind are added to our smoking fuel. Our woods are air dried for 18 to 24 months or kiln dried to 8% humidity, optimal for the extraction of flavors from the wood.

Whiskey Barrel Oak
... made from aged whiskey barrels and offers the traditional oak smoke flavor with notes of caramel, vanilla, nuts, autumnal spices, and honey. Makes a wonderful Smoked Old Fashioned and a perfect complement to whiskey, bourbon or scotch on the rocks.
Old Towne Gin
... made from toasted walnut wood with floral and juniper botanicals. Flavor notes include a medium smoke while the juniper berries are tart and sharp, with a resinous, piney flavor and hints of citrus.
Old Hickory
... aged hickory planks offer a sweet, yet strong bacon-flavor. The smoke can be pungent, but adds a nice, strong flavor to just about all meat cuts, especially with pork and ribs. Flavor pairs exceptionally well with Scotch and cocktails such as the Rob Roy, Rusty Nail, and the Godfather.
